Wednesday, April 4, 2007 – The “Banana Classic” recipe book has been lauded as an initiative which brings to the fore the untapped potential of the banana both as a fruit and a vegetable.

The launch of the book at the NIC conference room on Tuesday, March 03rd, is expected to add a new impetus to efforts aimed at promoting various banana diversification projects.

The cook book aimed at the general public, introduces over thirty new banana dishes to Saint Lucia, the Caribbean and beyond. One of the key sponsors of the project is the Banana Industry Trust, represented by executive officer Mr. Bertram Clarke.

“It is expected that the proceeds of the sale of the books would be used to print additional copies, finance the publication of other such books and support the annual local secondary schools food preparation competition,” Clarke said. “Let me thank the many persons who contributed to making this book a reality. It is expected that this book will makes its contribution to the banana industry both locally and overseas.”

Adding his voice to the successful outcome of what started as an innovative idea by the Ministry of Education's Home Economics Unit, Minister for Education and Culture Honourable Arsene James congratulated the young people who invented the dishes.

“Two objectives of the competition were to stimulate students creativity and culinary skills and to create a greater link between industry and education. Both objectives are in sync with the philosophy of the teaching/learning process. Provision is made for the acquisition of skills but it also allows for the expression of individual talents and ideas. There is also the opportunity to show the connection between education and the world of work. It helps to bring about a sense of patriotism, by having students to support their own, by making use of local products,” the minister said.


The other proud sponsors of the project included the Office of Private Sector Relations - OPSR - the Saint Lucia Coconut Growers Association (sponsors of the secondary schools food preparation competition) and Right Angle Imaging.

It is expected that the premiere “Banana Classic” recipe book will receive overwhelming public support.
